Egg Fried Rice

500 grams Basmati rice
»
2 cups carrot (cut into thin strips)
»
2 cups beans (chopped)
»
1/2 green bell pepper (chopped)
»
1 cup spring onion (chopped)
»
1 onion (chopped)
»
5 clove garlic (chopped)
»
2 eggs
»
2 tbsp. dark soy sauce
»
2 tbsp. green chili sauce
»
Salt
»
3-4 tbsp. oil
Making
Procedure:
At
first wash basmati rice and soak in fresh water for 30 minutes.
Boil
water in a pan. When the water starts boiling add soaked rice into it and
cover it for 2-3 minutes. Then turn off the heat and keep it for 5 minutes with
lid. Drain the water and spread the rice on a large plate.
Heat
oil in a wok or kadai . Add garlic and fry for a minute on low heat. Then add
onion and fry for 2 minutes. Now add carrot, beans, green bell pepper and
fry for 5-6 minutes on medium heat.
Add spring
onion and fry for a minute. Then add soy sauce, green chili sauce and mix
it. Now add boiled rice, salt and mix it well. Cook it for 5 minutes on low
medium heat.
Break
the eggs into a mixing bowl add salt and mix well. Heat oil into a fry pan and
pour it. Allow the eggs to cook. When the eggs are done scramble them.
Finally
mix the scrambled eggs with the cooked rice.
Garnish
with few spring onion and serve hot.
