Rui Maacher Korma (Rohu Fish Korma)
Ingredients:

4 pieces Rui maach
»
3 medium sized onion (make a smooth
paste)
»
1 tbsp. ginger paste
»
1-2 green chilies (chopped)
»
1 tsp. cashew nuts paste
»
10 grams raisins (whole)
»
50 grams curd or yogurt
»
2 bay leaves
»
1 tbsp. red chili powder
»
1/2 tsp kashmiri chili powder
»
1/4 tsp turmeric powder
»
1/4 tsp. sugar
»
5-6 tbsp. mustard oil
»
1 tsp. ghee (clarified butter)
»
1/4 tsp. shahi garam masala
»
Salt to taste
»
1/2 cup water
Making Procedure:
Wash
the fishes and marinate them with little salt and turmeric powder and keep it
aside for 5 minutes.
Heat
mustard oil in a wok or kadai till it begins to smoke. Then reduce heat and add
the marinated fish. Fry it on medium heat. Remove fishes from the wok and keep
it aside.
Now
add bay leaves, ginger paste and stir for 30 seconds. Add onion paste and fry
on medium flame until the color turns quite brown.
Then add the cashew nut paste, red & kashmiri chili powder, turmeric powder, salt, sugar and fry for a minute. Now add curd, mix well with other spices and cook it till the oil separates.
Then
add 1/2 cup of water, chopped green chilies, raisins and stir it, now add
fish in it and put on the lid.
Cook
on low flame for 5 minutes. Garnish with ghee and shahi garam masala.
Serve
with hot rice.
