Anaras / Pineapple Chutney

Anaras Chutney or Pineapple Chutney


Ingredients:

  • 1 3/4 cup anaras (grated)
  • 50 grams sugar*
  • 150 ml water
  • 1 tbsp. raisins
  • 2 tbsp. lime juice*
  • 1/4 tsp. lime zest
  • 1/2 tsp. cumin seeds
  • Pinch of salt
  • Few cashew nuts and cherry (for garnish)

Making Procedure:


Peel, clean and grate the anaras. Put the cumin seeds on a dry tawa and roast it. Then let it cool and grind. 

Boil water in a pan. Add sugar and stir it well.Then add raisins and boil for 5 minutes.

Now add the grated anaras and stir well. Cook it for 5-7 minutes. Add roasted cumin powder, lemon zest and 1 tbsp. lime juice. Mix it well and cook for another 2 minutes or the chutney thickens to your desire consistency.

Remove from heat and pour it into a glass bowl. Let it cool and then refrigerate it. 

Garnish with cashew and cherry and serve cold at the end of meal as a sweet note.

Note:

*Sugar and lime juice quantity depends on the sourness of the pineapple.
