Vegetable Biryani


Ingredients:


  • 200 grams basmati rice (or any other long grain rice)
  • 2 medium size onions (thinly slice)
  • 1 medium size tomato (make a paste)
  • 1/4 cup green peas (boiled)
  • 1/2 cup carrot (cut into julienne)
  • 1/2 cup green beans (chopped)
  • 1 tsp. ginger paste
  • 1 tsp. garlic paste
  • 2 tbsp. curd
  • 1/3 cup mik
  • 1 tbsp. biryani masala (I used ready made shahi biryani masala) 
  • 1/4 tsp. turmeric powder
  • 1/4 tsp. sugar
  • 4-5 tbsp. oil
  • 2 tbsp. + 1 tsp. pure ghee
  • Salt to taste

Making Procedure:


Wash the rice twice or till the water runs clear, then drain the water and boil the rice.

Heat 2 tbsp. oil in a pan; add carrot and green beans. Stir well and fry for 8-10 minutes on medium heat. Then remove from the heat and keep it aside. 

In the meantime heat 2 tbsp. oil in another pan; add onion slices and fry till the edges turn into golden brown colour. Add ginger-garlic paste, stir well and fry it for 2 minutes on low heat. Then add tomato paste and turmeric powder. Mix well and cook till the oil separates.

After that add curd and biryani masala. Stir well and cook it for 1-2 minutes. Add fried vegetables, green peas, salt and sugar, mix very well and keep it aside. 

Now grease a heavy bottom pan with 1 tsp. ghee, spread half of the rice and add vegetables over it. Then spread remaining rice. Pour 2 tbsp. ghee and milk on the top of the rice. Cover with lid and cook it for 8-10 minutes. Then remove from heat.

Now Vegetable Biryani is ready to serve. Serve hot with salad/raita.
