Mixed Vegetable Malai Korma


Ingredients:

  • 1 cup carrots (peel and cut into 1/2 " cubes)
  • 1 cup french beans (cut into 1/2 " pieces)
  • 1 cup potatoes (peel and cut into medium size cubes)
  • 1 cup cauliflower (cut into small florets)
  • 1 medium onion (finely chopped)
  • 1/4 cup tomato paste
  • 2 tsp. ginger paste
  • 2 tsp. garlic paste
  • 100 ml coconut milk **
  • 5 tbsp. oil
  • 1/4 tsp. black mustard seeds
  • 12-14 curry leaves
  • 1/2 tsp. turmeric powder
  • 1/2 tsp red chili powder
  • 1 tsp. coriander powder
  • 1/4 tsp. garam masala powder
  • 1 1/2 tsp. sugar
  • 200 ml water 

Making Procedure:


Wash and parboil the vegetables (carrots, french beans, potatoes). Separate the water from the vegetables and keep it for later use. Wash the cauliflower and add it in already boiled hot water.Then cover the pot for 2-3 minutes. After that drain the water and put it into a colander for 5 minutes.

Pour 3 tbsp. oil in a kadai and let it smoke. Then reduce the heat, add cauliflower and fry till they turn golden brown. Remove from oil and keep aside. Add the parboiled vegetables into the same oil and fry for 5-10 minutes on low-medium heat. Then keep it aside.

Heat 2 tbsp. oil in another pan and temper with black mustard seeds. When they splutter add chopped onion and curry leaves. Fry it till they become transparent.

Add ginger and garlic paste and fry it for 2 minutes on low heat. Then add tomato paste and fry it for another 2 minutes. Now add turmeric-red chili- coriander powder; stir well and fry for a minute.

Add 50 ml water and cook it till the oil comes out from the sides. Now add the fried vegetables, 150  ml water, salt and sugar. Mix well and cook it for 5 minutes on low heat. Then add coconut milk, stir well and cook it covered for 10-12 minutes. 

Open the lid and add garam masala powder. Stir it and cook for a minute. Now mixed vegetable malai korma is ready to serve.

Garnish with few coriander leaves(optional). Serve with roti / tandoori roti / naan.

** 2 tbsp. coconut milk powder dissolved in 100 ml warm water.
