Bihari Chicken Curry


Ingredients:

  • 700 grams chicken with bone
  • 50 grams yogurt
  • 2 cups onion (chopped)
  • 3 tbsp. ginger-garlic paste
  • 4 dry red chili (make a paste or paste with ginger-garlic)
  • 1/2 tsp. turmeric powder
  • 1 tsp. cumin powder
  • 1 tsp. coriander powder
  • 1/2 tsp. red chili powder (optional)
  • 1/4 tsp. black peppercorn
  • 1/2 tsp. shahi garam masala powder
  • Salt to taste
  • 1/3 cup + 1/4 cup oil
  • 2 tsp. pure ghee
  • 200 ml warm water

Making Procedure:



Clean and wash the chicken, then place it into a colander for 20 minutes. Then marinate the chicken pieces with yogurt and refrigerate it for 2 hours.

Heat 1/4 cup oil in a kadai and add black peppercorn. Then add marinated chicken, stir well and fry for 10-12 minutes on high heat. Add turmeric-cumin-coriander-red chili powder and fry for 2 minutes on low heat. Cover with a lid and cook for 8-10 minutes. Then remove from heat and keep aside.

Heat 1/3 cup oil and ghee in another kadai. Add chopped onion and fry it till some of the onion edges turn brown. Add ginger-garlic-red chili paste and stir it for 5 minutes on low heat.

After that add the chicken and salt. Stir well and cook till oil seperates. Then add water and mix well. Cook it covered for 10-15 minutes or the chicken is tender. Then open the lid and sprinkle garam masala powder over it. Stir well and remove from heat.

Garnish with few coriander leaves. Serve hot with plain rice, paratha or roti.
