Vermicelli Kheer (Simui Payesh)

Vermicelli Kheer














Ingredients:

  • 60g vermicelli
  • 500 ml milk
  • 100g sugar (or adjust to taste)
  • 1 tbsp. ghee
  • 1 tbsp. cashew nuts (broken)
  • 15-20 raisins
  • 5 almond (chopped)
  • 3 green cardamom pods (crushed)
  • 10-12 strands of saffron (soak 2 tbsp. ho milk)

Making Procedure:


Heat ghee in a pan. Add vermicelli and fry till they are light brown. Stir well so that they do not burn. Then add  cashew nuts and raisins and stir for a minute.

Pour the milk in another pan and bring it to boil. Simmer the heat and add fried vermicelli, cashew nuts, raisins and crushed green cardamom. Stir well and cook for 8-10 minutes.

Add sugar when the vermicelli soften. Then low the heat and let the milk thicken. After that add saffron, stir well and cook for a minute to finish. 

Garnish with almonds and serve hot or cold as you prefer.
