Chicken Bharta


Ingredients:


For the chicken:
  • 200 grams chicken (boneless)
  • 250 ml water
  • 1/4" cinnamon stick
  • 2 cloves
  • 2 medium clove of garlic (smashed)
  • 2 bay leaves
  • 1/8 cup onion (sliced)
  • A pinch of salt

For the gravy:
  • 1 egg (hard boiled)
  • 2-3 green cardamom
  • 1/2" cinnamon stick
  • 1-2 cloves (optional)
  • 4-5 black peppercorns
  • 1/4 cup onion ( chopped)
  • 1/4 cup onion paste
  • 1 1/2 tsp. ginger paste
  • 1 tbsp. charmagaz (make paste with little water)
  • 1 tbsp. cashew nuts (make paste with little water)
  • 1/2 tsp. turmeric powder
  • 1 tsp. red chili powder
  • 1/4 tsp. sugar
  • 3 tbsp. oil
  • 2 tsp. pure ghee
  • Salt to taste
  • 1 cup chicken stock 

Making Procedure:


In a pressure cooker add chicken, water, cinnamon stick, cloves, garlic, bay leaves, onion & salt and give 2-3 whistle then keep them until the steam dissipate on its own.

Heat oil in a pan then add ghee, whole garam masala (green cardamom, cloves, cinnamon stick, black peppercorns) and fry for 30 seconds. Add chopped onion and fry till transparent. Then add onion paste and fry till light brown.

After that add ginger paste, turmeric-red chili powder and fry it for a minute. Then add charmagaz & cashew paste, stir well and fry till oil separates. Add boiled chicken, chicken stock, salt and sugar. Mix well and cook it covered on low heat for 10-12 minutes or the gravy is thicken.

Garnish with boiled egg and serve hot with paratha or roti.
