Egg Pulusu













Ingredients:

  • 3 eggs (hard boiled & peeled)
  • 1 large onion (chopped)
  • 1 small tomato (sliced)
  • 2 tsp. garlic (chopped)
  • 2 tsp. ginger (grated)
  • 1/2 tsp. turmeric powder
  • 1 1/2 tsp. coriander powder
  • 1/2 tsp. cumin powder
  • 1/4 tsp. red chili powder
  • 1/4 tsp. tamarind pulp 
  • 3 tbsp. oil
  • 150 ml water
  • Salt to taste

To temper:
  • 6-8 curry leaves
  • 1 whole dry red chili
  • A pinch of fenugreek seeds
  • 1/8 black mustard seeds

Making Procedure:


Heat oil in a pan, add eggs and sauté for a minute. Then remove from oil, place them in a bowl and keep aside.

Add whole dry red chili, fenugreek seeds, black mustard seeds and curry leaves into the same oil. When the seeds splutter add chopped onion and fry till lightly browned.

After that add ginger-garlic and fry for a minute on low heat. Add sliced tomato and fry it till mushy. Then add turmeric-coriander-cumin-red chili powder and sauté for a minute.

Add water, salt, tamarind pulp and mix well. Then add eggs and cook it covered for 3-5 minutes or till the gravy thicken.
 
Garnish with few chopped coriander leaves and serve hot with plain rice.
